Influence of pork liver drying on ferrochelatase activity for zinc protoporphyrin formation

Pork liver contains an endogenous enzyme, ferrochelatase (FeCH), which catalyses the formation of zinc protoporphyrin (ZnPP), a natural pigment great interest for meat industry.
